Roasted Honey Mustard Chicken & Broccoli

Seriously, this might just be one of my favorite recipes I’ve ever made. Not only because it’s easy to throw together, but because the combination of flavors is so unique and unexpectedly delicious. The tanginess of the Dijon mustard really stands out!

Ingredients:
Rice:
1 1/2 cups (360 g) uncooked jasmine rice*
*Cooked leftover rice or microwaved packaged rice also works if you’re in a pinch for time and cannot make fresh rice.
~1 1/2 cups water
Sheet Pan Roast:
32 oz chicken breast fillets, crosshatched
2 heads broccoli (360 g), cut into florets
1/4 cup (60 g) Dijon mustard, divided
