Summer is ending, routines are creeping back in, and I have one request: please don’t make meal prep harder than it needs to be.
I don’t know about you, but I’m starting to feel that very specific end-of-summer panic.
The days start cooler in the morning, get hotter in the afternoon, and somehow feel cold again by dinner. They’re getting shorter, it’s getting darker earlier, the weekends are disappearing, and the calendar is filling up again.
(I’m not joking when I say I am booked with family and friends every Friday–Sunday for the next four weeks.)
Suddenly, “I’ll just figure out dinner later” doesn’t sound quite as fun when later means you’re exhausted, starving, standing in front of the fridge in the dark, wondering where the hell the day went — and what the hell you’re supposed to eat when you really don’t have the time to cook.
So, before summer officially slips away, I wanted to round up five of my easiest meal-prep-friendly recipes to help make the transition back into a routine feel a little less chaotic.
Every single one of these is made in one pan (or slowcooker) and takes 10 minutes or less of prep, because I genuinely believe that making a good meal doesn’t have to take up your entire day.
These are the recipes I want when I need something simple enough to throw together, tasty enough to look forward to eating day after day, and hearty enough to keep me full until the next meal.
1. Sheet Pan Roasted Honey Mustard Chicken & Broccoli
Starting strong with one of my favourite kinds of meal prep: throw everything on a sheet pan and let the oven do the work.
(And, as you’ll quickly notice, a lot on this list is going to be that easy.)
This chicken and broccoli is coated in a sweet, tangy honey mustard glaze that gets beautifully caramelized as everything roasts. The chicken stays juicy, the broccoli gets those crispy little charred edges, and the whole thing comes together with hardly any hands-on cooking required!
It’s simple, it’s high in protein, and it tastes absolutely divine.

2. One Pan Creamy Truffle Mushroom & Steak Pasta
Now, if you want your meal prep to feel a little more indulgent, this is the recipe for you.
Juicy steak, tender mushrooms, creamy fettuccine pasta, and a hint of truffle oil all come together in one pan for a dinner that feels significantly fancier than the amount of effort required.
Bonus: grab your steaks on sale like I did for maximum affordability. The only “splurge” was the truffle oil ($8 for a small bottle) — but you only need a little, and it goes a long way, so you’ll have it around for plenty of future recipes, too!
If I’m going to meal prep, I want it to taste amazing without breaking the bank — and I certainly don’t want a sink full of dishes complicating things.

3. Lemony Cajun Chicken Orzo Skillet
I will never get tired of a one-pan orzo situation. Especially not one as delicious as this!
This recipe went viral for a very, very good reason. It combines juicy Cajun-seasoned chicken thighs with creamy, cheesy orzo, and a burst of bright lemony flavors all in one skillet.
It’s comforting and hearty without feeling overly heavy, which makes it such a great option for this weird little period where summer isn’t quite over but we’re also starting to crave cozier meals.
And, obviously, the fact that the orzo cooks right in the same pan as everything else is a major win.

4. Sweet & Smoky Chipotle Pulled Pork
Taking home the gold medal for least amount of effort: this set-it-and-forget-it crockpot wonder. Your slow cooker does basically everything.
Sweet, smoky, ultra-savory pulled pork packs the perfect amount of chipotle heat and a ton of protein.
I love recipes like this for meal prep because the possibilities are endless. Throw it into wraps, tacos, sandwiches, salads, quesadillas — or honestly, just eat it straight out of the container with a fork.

And finally, we’re practically knocking on fall’s door with this maple-glazed sheet pan roast!

Minimal prep, minimal cleanup, and exactly what you want when those sweet-and-savory cravings start creeping in.
But honestly, the real star is those Brussels sprouts… they just might convert even the biggest Brussels sprout skeptic!

If there’s one thing I’ve learned from meal prepping, it’s that you don’t need to make your entire week’s worth of food in one marathon cooking session.
Sometimes, having just one or two ready-to-go meals in the fridge is enough to make the rest of the week feel significantly easier.
Pick whichever recipe sounds best, double it if you want extra servings, portion everything out, and suddenly you’ve eliminated the guesswork of, “What can I eat for dinner that doesn’t suck but is actually good for me?”
Because the goal isn’t to make your life revolve around meal prep. It’s to make meal prep make your life easier.
